I serve this summer salsa with corn chips, tacos, over brown rice and beans, or on top of grilled chicken or fish. There are so many options, and this salsa adds a lot of flavor and nutrition. This recipe has a great, chunky texture, and the sweet taste of fresh peaches. I tend to serve this salsa at room temperature.
Summery Peach Salsa
1 can of black beans (drained and rinsed)
2 ripe peaches (diced)
1/2 red onion (chopped)
1/2 c fresh cilantro (chopped)
1 lime (juiced)
1 pinch each – cayenne pepper, iodized sea salt, black pepper
- In a large mixing bowl, combine and mix all ingredients.
- Serve as one of the options above and enjoy!
- If there are any leftovers (there probably won’t be), refrigerate up to 4 days.
