Easy Summery Peach Salsa

I serve this summer salsa with corn chips, tacos, over brown rice and beans, or on top of grilled chicken or fish.  There are so many options, and this salsa adds a lot of flavor and nutrition.  This recipe has a great, chunky texture, and the sweet taste of fresh peaches.  I tend to serve this salsa at room temperature.

Summery Peach Salsa


1 can of black beans (drained and rinsed)

2 ripe peaches (diced)

1/2 red onion (chopped)

1/2 c fresh cilantro (chopped)

1 lime (juiced)

1 pinch each – cayenne pepper, iodized sea salt, black pepper



  1. In a large mixing bowl, combine and mix all ingredients.
  2. Serve as one of the options above and enjoy!
  3. If there are any leftovers (there probably won’t be), refrigerate up to 4 days.
